Join us for an extraordinary evening exploring the vision of Richard Geoffroy, the legendary former Chef de Cave of Dom Pérignon. After nearly three decades shaping one of Champagne’s most iconic houses, Geoffroy embarked on a new journey in Japan, creating IWA Sake—a groundbreaking sake designed with the same philosophy of harmony, complexity, and timeless elegance.
During this guided tasting, we’ll compare two expressions of IWA alongside Dom Pérignon 2017, discovering how one winemaker’s philosophy transcends category, country, and tradition.

For this edition of our Women in Wine series, we’re honored to welcome Marta Delfa of Parés Baltà, one of Spain’s most respected family-owned wineries and a leader in organic and biodynamic viticulture.
Founded in 1790 in the heart of Penedès, Parés Baltà has become internationally recognized for producing exceptional wines and Cavas while farming with a deep respect for nature and biodiversity.
Throughout the evening, Marta will guide you through a curated selection of Parés Baltà’s Cavas and wines, sharing the family’s philosophy of sustainability, biodynamic farming, and minimal-intervention winemaking. You’ll discover how healthy vineyards, living soils, and thoughtful stewardship create wines that authentically express their terroir.
